One of the guest favorite breakfast meals include this Puff Pastry with Egg and Asiago. While it is something I just throw together without exact measurements, I will do my best to duplicate it here :).
Puff Pastry with Egg and Asiago
4 Puff Pastry sheets (I use precut 4x4 sheets)
8 cherry tomatoes
4 pieces of bacon (precooked)
1/2 cup Asiago cheese, shredded
1/4 heavy cream
Salt & Pepper
Preheat oven to 400. While oven is preheating, take dough sheets and turn edges up about 1/4 inch. This will keep the cheese/cream mixture from running out. With a fork, poke holes around the pastry. In a bowl, mix together cheese, cream, salt and pepper. Spoon a large spoonful in the center of each puff pastry sheet. Spread around base of pastry. Cut cherry tomatoes in half and put one half in each corner. Bake for 8-10 minutes until puff pastry is lightly brown and cheese is bubbly.
When puff pastry is almost done, cook egg in skillet careful to keep the yolk runny. When puff pastry is done, place cooked egg on top, put 1/2 piece of bacon on each side of the pasty and top with more shredded Asiago and green onion. Enjoy!
